Loaded Smashed Potatoes

16-20 little potatoes
6 pieces of bacon, cooked and roughly chopped
1 cup shredded yellow cheddar
2 green onions, sliced
3/4 cup sour cream
1 tbsp chopped chives
1 tsp garlic powder
1 tsp onion powder
Extra-virgin olive oil
Salt and pepper

Boil potatoes for 10-15 minutes, until fork tender. Preheat oven to 450°F. Line a baking sheet with parchment paper and evenly spread out potatoes. Use a jar or glass to smash each potato, as shown. Drizzle with olive oil, and season with salt and pepper. Bake for 15 minutes. Remove from the oven add chopped bacon and cheddar cheese. Smashed and loaded red potatoes are my favorite side to make when I’m over the usual selections.

Boil your red potatoes until they are tender and then add them to a lined sheet pan. Smash each potato, drizzle with olive oil, season and top with cheese and other fave toppings. Bake until the cheese melts. Sooooo good. 🤤
