MADE: Tamarind pate we fruit. Used 40g pulp (with seeds), about 160g water, which gave 135g tamarind water. Added 135g sugar, 10% mixed with 2g pectin at 120F, the rest added after 1 min. 1g citric acid mixed with 1g water when at 108C. Boiled for another min.
