On the 11th day of holiday, Kahlua gave to me... 11 chocolate truffles. INGREDIENTS: 2 tbsp Kahlua 12 oz semi-sweet chocolate 2 tbsp butter 1/3 cup heavy cream 1 tsp vanilla extract INSTRUCTIONS: In a double broiler over simmering water, combine chocolate, butter and heavy cream. Stir until chocolate is melted. Remove from heat and whisk in vanilla and Kahlua. Cover bowl and refrigerate for 2 hours. Scoop out chocolate into 1” balls. Cover in desired topping. Refrigerate until ready to serve.

Mexican Rice
Mexican Rice 1 cup uncooked long-grain rice 2 cups chicken broth 1 Tablespoon butter 1/2 cup salsa 1 teaspoon garlic salt 1/2 teaspoon ground cumin Directions: Combine all ingredients into a medium, non-stick skillet. Bring to a boil, then cover and reduce heat to low. Simmer for 25 minutes. Remove from heat and let rice stand with lid on for 10 minutes. Remove lid and fluff rice with a fork. Serve!
