I was trying to do one of those cool TikTok, meringue breads, and did it all in the wrong order, and ended up with a batter that was completely flat, decided to still bake it, and ended up with the most delicious cheesecake that gets almost all of its calories from protein. This thing is delicious! It’s not as creamy as a traditional cheesecake, has a firmer texture, but it is the most amazing way to start your day, or have a healthy snack between meals. You can flavor it however you like. I love to make a little bit of homemade jam and spread it on. Supposed to be only two ingredients…… I needed a third…… And my son snuck in a fourth. 

Each muffin has 16 g of protein and 180 cal

One whole box of chocolate, Kodiak pancake mix 

One bottle, CorePower elite protein drink ( you can also replace this with chocolate protein powder and the equivalent of water)

0.5 to 1 cup skim fairlife milk (doesn’t have to be fair Life, but it has twice the protein)

Optional… And I didn’t find out until after the fact, but my son put in some chocolate chips. Lol. 

Mix everything into a batter, place in muffin tins, and bake at 375° for 14 minutes
