Ingredients:

- 1.5 liter milk
- 3/4 cup sugar (add more if you like it sweeter) 
- 1/4 cup water
- 1/4 cup curd (as a starter culture) 

Instructions:
1. Boil milk in a heavy-bottomed pan over medium heat, stirring occasionally.
2. Reduce heat to low and simmer for 20-25 minutes until volume reduces by half.
3. Caramelize sugar with water until golden brown. Add milk in batches, stir until sugar dissolves, simmer for 5 minutes.
4. Remove from heat, let milk cool to 110°F/43°C.
5. Mix yogurt with lukewarm milk until smooth.
6. Add yogurt mixture to milk, whisk well.
7. Pour into clean containers, cover, place in a warm spot to set for 12-48 hours.
