Cara Rose, Executive Director Pocahontas County Convention and Visitors Bureau What is it about biscuits? I think what makes the Appalachian biscuit better than Pillsbury’s is the art of making something delicious – fast, with simple ingredients. The biscuit was an easy way to put bread on the table every day. And it was inexpensive [...]

What are cat head biscuits? These are believed to be an old Appalachia favorite. The origins of the name are lost to time, but it's believed that they're called that because they're about the size of a cat's head. Cat head biscuits are a lot less fuss to make than rolled and cut biscuits, come together pretty fast and bake golden brown and are very tender.

Fluffy on the inside, with crispy buttery tops made this a huge hit in my kitchen. Total comfort food made completely from scratch. This recipe is a quick and easy, "cut-in" buttermilk biscuit recipe that is, "according to legend supposed to be the size of a cat's head". This recipe makes them more reasonable sized, but equally delicious. The dough was easy to stir together, and the method of pulling the dough to form the biscuits, welcomed. As big as a cat's head, golden brown on the outside, but soft and fluffy as a dinner roll on the inside, these regional biscuits deserve national recognition. When we spied “Cat Head Biscuits" on a highway billboard near Greensboro, N.C., we did an immediate double take (not to mention a U-turn) to see what exactly they were. Funny name, delicious biscuit! Loretta gave them this unusual name because when her husband "Doo" made them, he dropped such huge amounts for each biscuit onto the baking sheet. She said they were as big as cat's heads!:) The thing I love about these is that they only require 3 ingredients. That's almost as easy as popping open a can! They are also soft as velvet and delicious. My husband actually called them the best biscuit ever. And that's a lot coming from such a picky eater. Sorry babe…

Cathead biscuits is a wonderful, old-fashioned recipe for biscuits. They get the name because they were supposed to be as big as a cat's head. My mother made these biscuits every day. #biscuits #cathead #bread #recipes #oldfashionedrecipes #delicious #comfortfood #breakfast

some food is cooking in a skillet on the table next to a spatula

Cat head (or cathead) biscuits are a Southern staple whose name refers to their large size (about as big as a cat's head). The dough for this hand-rolled biscuit recipe is made by incorporating flour into the wet ingredients, instead of the reverse. The result is a fluffy (rather than flaky) biscuit, ready to be split and spread with flavorful honey butter.
