Sear them in a hot pan, cooking each side for 5–7 minutes until fully cooked, then slice and set aside. In the same pan, heat a bit more oil and sauté the garlic and ginger for a few minutes. Add water to deglaze the pan, then stir in dark soy sauce and honey. Combine well before mixing in the cornflour slurry, stirring until the sauce thickens, and add sesame oil. Adjust with a bit more water if needed. Return the chicken to the pan, coat well in the sauce, and simmer briefly.
