Here is the recipe for Potato and Leek soup
1 tbsp butter
3 leeks, thinly sliced
2 celery stalks thinly sliced
3 large baking or yellow skinned potatoes, diced
2 cups reduced sodium vegetable or chicken broth
2 cups milk
2 tbsp lemon juice ( I didn't use the lemon juice just my preference)
Salt and pepper
In a pot, melt butter, add leeks and celery. Stir often for 5 mins or until leeks are soft. Add potatoes, broth and 1 cup of water. Reduce heat to medium low and boil gently until the potato
