This cozy, creamy, dairy-free pumpkin cheesecake is so soft and silky and perfectly spiced for fall😌🥰

✨Filling Ingredients
1 block silken tofu (350 g)
1/2 heaping cup cashews (85 g)*
1/2 lemon juice
1/4 cup coconut cream*
1 can pumpkin puree (2 cups/ 15 oz)
1/3 cup maple syrup
1/2 cup sugar
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp ginger
1/4 cup cornstarch

✨Cookie Crust
150 grams vegan graham cracker type cookie (I used Biscoff cookies)
3 1/2 tbsp vegan butter (50 g)

✨Directions
*Refrigerate a can of coconut milk overnight. Then when you open it, scoop out only the solid part that has formed at the top. This is your coconut cream.
