Vanilla Donuts



June 3rd is National Donut Day.  I have some sweet little donuts to share with you.

I had them glazed for my children and added some of these cute little flowers sprinkled all over top.  However, as morning progressed the glaze was absorbed but I have to say they were just as delicious.  I had mine with tea in the afternoon.  Morning and sugar do not go together for me, save for a little in my coffee.

For the glaze, I added some strawberry flavoring.  You can flavor it any way you see fit though.  The nutmeg that is in the recipe really helps out.  I think it boosts vanilla flavor.  A 1/4 teaspoon is just enough to give you a hint rather than overpowering it with nutmeg flavor.

I have to tell you that every time I look at the picture above I want to glaze those donuts.

Vanilla Mini Donuts
These donuts are not real sweet.  Which is good but if you want to amp up the sweetness, then glaze them.  See recipe below.

2 2/3 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon nutmeg
3/4 teaspoon salt
3/4 cup sugar
1 tablespoon vanilla extract
1 1/4 cup buttermilk*
2 eggs
1/4 cup butter, melted
1/4 cup oil
glaze (optional)

Mix dry ingredients: flour , baking powder, baking soda, nutmeg, salt, sugar.  Set aside.

Mix wet ingredients:  melted butter, oil, vanilla extract and eggs.  Mix the wet into the dry and stir just until combined.

Spoon into greased donut sheet and bake.  I made mine in a Baby Cakes machine.  I spooned heaping tablespoons into the little wells.

Glaze while warm.  To make glaze combined confectioners sugar, about 2 cups, a tablespoon of milk and whatever flavoring you desire.  Add more confectioners sugar or liquid to make a runny mixture that you can drizzle over top of donuts.

*You can substitute the buttermilk with a 3/4 cup milk and 1/2 cup sour cream or a 3/4 cup milk and 1/2 cup yogurt.

Mini Cake Donuts

Here at our house we go from Holidays to birthday parties.  It's crammin' jammin', non-stop birthday parties. 


This is what I made for breakfast for our slumber party guests. 

Mini Cake Donuts

2 cups all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon salt
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla extract
1 tablespoon shortening

Preheat mini donut maker.

In a large bowl, beat shortening with sugar and then add in eggs, one at a time. Mix flour, baking powder, nutmeg, cinnamon and salt. Stir in milk and vanilla. Beat together until well blended.

Fill each donut hold with a heaping tablespoon of batter.  Close lid and heat until ready light comes on. Remove and place on rack.

For the glaze, I just mixed some sugar with milk and poured a little on the donuts while they were still warm.

Pumpkin Dough Nuts




This was one of those recipes that I saw on Pinterest and made that night.  Why? because it looked so good.  I had all the ingredients.  Had some company coming over- perfect for sharing. The recipe was from King Arthur Flour- one of my favorite sources for good recipes. Not to mention my favorite type of flour- no one paid me to say that (though I would never turn down a gift of flour from King Arthur). I have not found a bad recipe from that site yet- and I have made many of them.

This was made with one of those mini baker donut thingy dingies.  Yah know- it looked like this-

Me and the girls sat at the kitchen table, baking donuts and putting sugar on them and then eating them.  We even shared a few.

You certainly can make them in the regular oven, in a donut pan or even in mini muffin pans- whatever you like.  They will stay taste amazing any way!

Pumpkin Mini Donuts
recipe adapted from here at the King Arthur blog.

1/2 cup vegetable oil
3 large eggs
1 1/2 cups granulated sugar
1 1/2 cups pumpkin purée (canned pumpkin)
1 1/2 teaspoons pumpkin pie spice, or 3/4 teaspoon ground cinnamon plus a heaping 1/4 teaspoon each ground nutmeg and ground ginger
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder

Beat everything together until smooth.

Add 1 3/4 cups + 2 tablespoons (8 ounces) King Arthur Unbleached All-Purpose Flour, stirring just until smooth. Dont overmix.


Bake the dough nuts for about seven minutes in the donut maker- when the ready light is on, check them.

Remove the dough nuts from the dough nut baker, and transfer them to a rack to cool. Sprinkle sugar over top while fresh from the baker.  Flip and sugar again.

Chocolate Glazed Donuts

My Mom bought me, well really I should say, my Mom bought my kids this donut maker.  You see, I rarely buy donuts.  Like maybe once a year.  I like them, I am just not into them.  It's probably the "fried" thing.  My kids however LOVE donuts.  Donut holes.  In fact they are my motivation for buying donuts because otherwise I would never go.
Enter this little machine and you can take the "fry" out of donuts.  It's pretty handy and the donuts were pretty good. A very fun thing to do with the kids.  There are two sizes out there- so if you are interested- shop around.

Chocolate Glazed Chocolate Donuts

1 1/4 cups flour
1/2 cup cocoa
1/2 cup sugar
1 tablespoon baking powder
1 egg
3/4 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla

Combine dry ingredients in a medium sized bowl.  In a large measuring cup or a small bowl, combine wet ingredients: buttermilk, egg, oil and vanilla.  Add the wet to the dry.  Mix until just combined.  Pour mixture into a pastry bag or a plastic container with a small hole cut in it at the corner.  This will make it so much easier to put into the donut forms.  Once they come out of the donut cooker or your oven (you could easily do these in your oven in a donut pan- 350F for 10 to 20 minutes), pour glaze onto donut while it is still hot.

You could also make these donuts.
