Malva Pudding My Way served with Orange-scented Custard

Ingredients: • 1 cup castor sugar • 2 extra-large eggs • 1 tablespoon apricot jam • 1 teaspoon vanilla extract • 1 ½ cups all-purpose flour, sifted 3 times ]
• ½ teaspoon ground cardamom • ½ teaspoon ground ginger • 1 teaspoon bicarbonate of soda • Pinch of salt • 30g butter, melted • 1 tablespoon white vinegar • ½ cup milk
Sauce • 1 cup (250 ml) cream • 125g butter • ½ cup sugar • ½ cup water
Cheat’s custard • 3 cups ready-made custard • ½ cup cream • 2 tablespoons orange zest
Method:

1. Preheat the oven to 180°C.
2. Butter an oven-proof baking dish large enough to hold the batter.
