So my mum bought like 2kg of fresh Hakka noodles and stored them in the freezer for us to eat anytime hehe. We are not Hakka so Hakka people please let us know how you make it at home hahaha.

HAKKA MEE NOODLES

INGREDIENTS:
TO MARINADE:
600g pork belly mince (sub chicken for halal)
1 tbsp light soy sauce
3 tbsp fish sauce
1 tsp tapioca flour
dash of white pepper
salt to taste

TO FRY:
2 tbsp cooking oil
2 cloves garlic
2 shallots

TO BLANCH:
3 l water
1 tsp salt 
100g choy sum
2 portion Hakka noodles 

FOR GARNISH:
1 stalk spring onion (chopped finely)

METHOD:
1. Heat wok to medium. Add oil. When wok is hot, add in shallots.
