- 1 head cos (or any other greens)
- about 1 cup shredded purple cabbage (about 1/2 head)
- 3-4 large carrots shredded 
- 2-3 Lebanese cucumbers 
- 160g edamame (1 cup)
- green onion
- 1 red onion
- 1.25 cup cooked quinoa (about 230g)
- 20g crushed peanuts
- 500g cooked prawns (just cooked with a soy, lemon and chilli flakes

Dressing:
- 1/2 cup runny pb (about 150g)
- 1/4 cup low sodium soy sauce (or tamari, coconut aminos)
- 1/4 cup rice wine vinegar
- 2 tbsp sriracha
- 2 tbsp honey (about 30g)
- crushed ginger & garlic 
- chilli flakes (to taste)
- 1-2 lemons or limes (juiced)
- hot water to thin

Serves 4-6

For the chicken marinade: 
1 lb boneless, skinless chicken thighs 
5 ounces coconut aminos 
juice of one lime

For the quinoa: 
3/4 cup quinoa
1 cup chicken broth
1 teaspoon olive oil
pinch sea salt

For the salad: 
1.5 cups shredded purple cabbage
1 red bell pepper, diced
1/5 cups shredded carrots
1/5 cups thawed edamame beans
*the cooked quinoa from above
juice of 1 lime
1 teaspoon sea salt
1/2 teaspoon black pepper
1/4 cup slivered almonds, for garnish
1 lime, cut into wedges, for garnish

Directions: 
1. Pour the coconut aminos and lime juice over the chicken thighs in a large bowl or container. let it marinade for 1 hour to 24 hours.
