Ingredients
• 2 medium onions, thinly sliced
• 2 tbsp olive oil
• 1 tsp sugar (optional)
• 1 sheet puff pastry (thawed)
• 2 tbsp unsalted butter, melted
• 1 tsp fresh thyme leaves (plus extra for garnish)
• Salt to taste
• 4 oz brie cheese, cut into small pieces
• 2 tbsp fig jam

Instructions
1️⃣ Heat oil in a skillet over medium-low heat. Add onions + a pinch of salt. Stir occasionally for 25-30 mins to caramelize (add sugar if desired).
2️⃣ Roll out puff pastry and cut into 2.5-3” circles. Place on a baking sheet, poke 8 small holes with a fork, and brush with melted butter. Sprinkle with thyme + salt.
