Garlicky Feta Broccoli Chicken Salad: This protein-packed dish is bursting with flavor and can be prepped ahead easily. Serve it as is, on sourdough, crackers, or lettuce cups. Feel free to adjust ingredient ratios to your preference. Instructions: Sauce: If using garlic confit, roast 1/3 to 1/2 cup garlic cloves in olive oil at 275F for 2 hours. Let cool. In a food processor, blend 4-5 tbsp of garlic confit, 4oz feta, 4 tbsp Greek yogurt, 2 tbsp mayo, 2 tbsp white vinegar, 1/4 cup water, salt, and pepper. Salad: Finely chop 6-8oz raw broccoli and dice 2 baked chicken breasts. Soak 1 diced red onion in cold water for 5-10 minutes, then strain. Combine broccoli, chicken, and onion in a bowl. Add sauce, toss, adjust seasoning, and top with feta, chili flakes, or preferred toppings.
