This is my easy Boursin Spinach & Sun-dried Tomato Orzo Bake that can be made all in one baking dish! It is loaded with spinach, sun-dried tomatoes, and creamy boursin cheese making this the perfect weeknight meal that will leave you feeling comforted and so satisfied. If you love Boursin, you’ll love this Pasta! its super autumnal and perfect for using up your leftover pumpkins after the holiday season is over. You HAVE to try this!

🧀 Add 2 wheels of boursin, 1 small head of garlic, 700g pumpkin, a drizzle of oil and herbs (we did 2 tsp sage, 1 tsp thyme, 1 tbsp oregano, 1 tbsp basil) to a roasting tin, cover with foil and oven bake for 40 mins at 180C
🎃 Remove the foil and bake for another 10 mins - until the pumpkin is soft and garlic golden and mushy 
🧀 Towards the end of the cooking time, cook 300g pasta according to packet instructions
🎃 Squeeze out the garlic and mash the pumpkin and boursin using a fork 
🧀 Add loads of pasta water to make it extra creamy, and add the cooked pasta - mix Pumpkin Pasta Bake, Leftover Pumpkin, Pumpkin Pasta, Pasta Water, Cooked Pasta, Garlic Head, Small Head, Pasta Bake, Mediterranean Recipes
