For the macaron recipe, I used @preppykitchen’s recipe - it’s always worked for me! Unless I messed something up. Which can always happen with these extra delicate things. DON’T BAKE THEM ON A RAINY/HUMID DAY 🥹🌧️⛈️

▢ 100 g egg whites room temperature 3 large eggs
▢ 140 g almond flour 1 1/2 cups
▢ 90 g granulated sugar just under 1/2 cup
▢ 130 g powdered sugar 1 cup
▢ 1.5 tbsp Thai Tea Mix
▢ 1 tsp vanilla 5mL
▢ 1/4 tsp cream of tartar 800mg

If you read my macaron posts I had been using the Italian method of making my meringue but for some reason when I added in the tea my batter was so runny that when I piped the macarons on my new silpat they just ran and merged together.
