Ingredients: 4 fish fillets (cod, sea bass, or snapper) Salt and freshly ground black pepper, to taste 2 tbsp olive oil 2 cloves garlic, minced 1 cup cherry tomatoes, halved ½ cup black olives, pitted and sliced ¼ cup capers, drained 1 lemon, thinly sliced ¼ cup chopped fresh parsley ¼ cup chopped fresh basil Instructions: 1️⃣ Preheat the Oven: Preheat to 400°F (200°C). 2️⃣ Prepare the Fish: Season fish fillets with salt and pepper. Place them in a baking dish in a single layer. 3️⃣ Add Flavorings: Drizzle olive oil over the fish. Scatter garlic, cherry tomatoes, olives, and capers around and on top. Place lemon slices over the fillets. 4️⃣ Bake the Fish: Bake for 12-15 mins, until the fish flakes easily with a fork and is cooked through.

Sheet Pan Sticky Apricot Salmon & Crispy Brussels Sprouts
Ingredients: 1 lb brussels sprouts, 1 lb salmon (cubed), 1 tbsp smoked paprika, 1 tsp oregano, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp cayenne, ¼ tsp black pepper, ½ cup apricot preserves, ¼ cup soy sauce, 2 tbsp pineapple juice, 1 tbsp minced ginger, 4 minced garlic cloves, steamed rice, sesame seeds, green onions. Instructions: Preheat oven to 425°F. Roast brussels sprouts tossed in olive oil, salt, and pepper for 10 mins. Season salmon with spice blend. Add salmon to the sheet pan with brussels sprouts and roast for 8 mins. Simmer apricot preserves, soy sauce, juice, ginger, and garlic until thick. Coat salmon with sauce, roast 4–5 mins more. Serve over rice, garnished with sesame seeds and green onions.

Honey Pineapple Salmon Ingredients: 4 salmon fillets Salt and pepper to taste 1 tbsp olive oil ½ cup pineapple juice ¼ cup honey 2 tbsp soy sauce 1 tsp garlic, minced 1 cup fresh pineapple chunks Fresh cilantro, chopped (for garnish) Instructions: Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear salmon fillets, skin side up, for 3-4 mins until golden. Flip and cook an additional 3 mins. In a small bowl, whisk together pineapple juice, honey, soy sauce, and garlic. Pour sauce over salmon and add pineapple chunks. Simmer for 3-4 mins until sauce thickens and salmon is cooked through.
