Ingredients
	•	3 ripe pear tomatoes
	•	1/2 small onion, finely chopped
	•	1 tbsp pickles, chopped
	•	4 anchovy fillets
	•	1 tsp Dijon mustard
	•	1 tsp salt
	•	Pepper to taste
	•	2 tbsp extra virgin olive oil
	•	1 tbsp Modena vinegar
	•	1/2 tbsp gluten-free soy sauce
	•	Grated fresh tomato by @bonnysacontigo
	•	Burrata
	•	Toasted bread for serving

Instructions
	1.	Blanch the tomatoes in boiling water for 1 minute, then cool in ice water and peel.
	2.	Remove seeds and finely dice the tomatoes, onion, pickles, and anchovies.
