Ingredients 2 & 1/2 cups all purpose flour/ bread flour (325g) 1 tsp salt 1 tsp sugar 1 1/4 tsp yeast 1 & 1/2 tbsp olive oil 300ml luke warm water Method: In a large bowl, add flour, salt, sugar and instant yeast and mix. Now add olive oil and lukewarm water and mix with a spoon until everything is combined. Now cover and put it in a warm place to proof. (If you live in a cold place, preheat ur oven to 80C for 10 minutes, and put the bowl there for proofing). 1. After 20 minutes, uncover the bowl, and stretch and fold the dough from all sides. For this- Wet your hands (this prevents dough from sticking), grab a handful of dough from the 12 o’clock position, pull it up and then over the bulk of the dough to the 6 o’clock position. Repeat this action on all sides of the dough until it feels like you’ve created tension and you can’t stretch the dough anymore. Cover and let it rest again for 20mins. 2. After 20 mins, do another stretch and fold and let it rest again for 1 hour. 3. After, place a sheet of parchment paper in a 10” round pan, and drizzle olive oil on it. Transfer the dough to that pan. Now fold the dough from left and right to make a rectangle and flip it so that the neat sight is up now. (If you find it difficult,skip the flipping). Cover and let it rest in the pan for about 1-1.5 hours. 4. After, spread olive oil on top and dimple with the help of your fingers. Put your favorite toppings and bake in a preheated oven at 210C (on the lowest rack) for 18-20 minutes or until it is golden brown from top.
