Making this one really tied together some roots. What's known as "Sorrel" in Jamaica and other Caribbean countries is called Zobo in Nigeria. Sweet, earthy, tart, and nothing short of delicious. It's typically made with sugar or a sweetener, but I opted for the fruits to do the talking. 

You can add a variety of flavors, but the dried hibiscus is the key component of any Zobo.

Recipe:
1 pineapple
4 Oranges
10 cups of boiling water
2" Ginger
10 cloves
1 cinnamon stick
Pineapple rinds
Pineapple and Orange pulp
8 cups rehydrated hibiscus leaves
