I’ve seen @raniaobeidallah making a smashed falafel wrap and it looked so good that I had to give it my own twist.😋
RECIPE (2 servings, 15min prep time):
-1 can chickpeas
-a bunch fresh parsley
-a bunch of fresh cilantro
-1 clove garlic
-1 Tsp cumin
-1 Tsp ground coriander 
-salt to taste
-1 Tbsp lemon juice 
-2 Tbsp flour 
Blend until it’s a paste.
-2 flatbreads
-cucumber, tomato as filling
Tahini sauce:
-1 Tsp tahini
-1/2 Tbsp lemon juice 
-1 Tbsp maple syrup
-salt to taste
Smash the mixture on the flatbreads and fry in some oil for a few minutes until golden.
Fill with the veggies, tahini sauce and enjoy.

I’ve lost 7 kgs in a month and this dish is something I eat atleast once a week for dinner. It’s so so tasty and filling & a great way to use leftover roti too.  Overall I’ve soaked 1.5 cups chickpeas for 12-15 hours overnight (they increase in quantity after soaking). Out of that used 1 cup as it is for falafel and cooked 1 cup in the pressure cooker until tender for hummus.   The crispy falafel (without frying) over the roti with creamy hummus and crunchy, pickled vegetables make for a great tasteful meal. It’s the perfect healthy one meal dinner.
