Since I bake 40-50 loaves a week now, it’s been a much-needed skill I’ve had to learn. Here’s my full tutorial! Equipment: 1. @bakingsteel Baking Steel Plus (linked in my bio) 2. Pizza peel to launch the bread easily into the oven. I’m using the Baking Steel Plus peel, as it’s the perfect size for 4 loaves. 3. Kettle with boiling water 4. Towel to cover glass while pouring water. You don’t want to get any water on the glass, it could shatter! 5. Pan with lava rocks. Alternatively you can use rolled up towels in a pan. 6. Good oven gloves. I use @lanongloves and they’re amazing! Link in bio. How to:

-I preheat my oven to 450F degrees with my XL @bakingsteel and 2 cast iron skillets filled with lava rocks. Once it’s preheated, give it an additional 20-30 minutes to get very hot. 
-I boil a pot of water using an electric kettle (filled to the max line)
- I load up 4 900g loaves that had been cold proofing in the fridge overnight onto parchment paper that is laid out on my XL pizza peel. 
-As soon as I open the oven I lay the towel down on the glass door, hot water could cause the glass to shatter.
