Ingredients: 6 large eggs 1/4 cup milk (or dairy-free alternative) 1 cup fresh spinach, chopped 1/2 cup crumbled feta cheese 1/4 cup red bell pepper, finely diced 1/4 teaspoon garlic powder Salt and pepper to taste Non-stick cooking spray Directions: Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with non-stick cooking spray. In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the chopped spinach, feta cheese, diced red bell pepper, garlic powder, salt, and pepper. Mix until evenly distributed. Divide the mixture evenly among the prepared muffin cups, filling each about 3/4 full. Bake for 18-20 minutes, or until the egg muffins are set and slightly golden on top. Allow the muffins to cool for 5 minutes before carefully removing
