Cook in a wok over medium-high heat w/ 1 tbsp butter. Set aside & dice. Shred spaghetti squash. Add remaining butter to wok. Sauté the garlic and shallot. Add in the sun-dried tomatoes and cook an additional minute. Pour in the heavy cream and cook until hot and bubbly. Turn the heat down & stir in Parmesan and spinach. Add chicken & spaghetti squash. Stir until fully incorporated.
