You can also pre prep for these rolls as you can make the stuffing ahead and store it to use later. Let’s see how to make it. To make the sugar syrup: In a pan add 1/2 cup sugar, 1/4 cup water and let it boil. Once it boil turn flame to medium and let it cook until the consistency thickens. You can check the consistency by touching a drop of the syrup and it should form one thread when pressed. Add in 1/2 tsp rose essence, 1/2 tsp cardamom powder and few saffron strands. Keep aside. For the nuts : In a pan add 1 tsp ghee, 19-20 cashews, 30 almonds, 8 dates. Roast them for 4-5 minutes and make powder of them with help of grinder. For the stuffing: In a pan add 1/2 tbsp ghee, 1 1/2 cup mawa. Sauté on medium flame until it becomes little dark in color, leaves ghee and you can smell nice aroma. Switch off Add in powdered nuts, 1/4 cup sugar, 1 tsp cardamom and 1/4 tsp saffron strands. For the rolls: You will need 6-7 (in total 12-14 sheets) sets of phyllo sheets. Take two phyllo sheets together. Brush it with ghee. Cut in half, spread flour slurry on the edges and place 2-3 tbsp of stuffing on the edge leaving an inch space on top. Roll the Philly rectangle to form a cigar from top to end. Once rolled place all of them in baking tray. Brush them again with ghee and air fry them at 400 degree F for 8-9 minutes. Take them out and turn them upside down. Again airfry them for 4-5 minutes or until golden brown at 400 degree F.
