pistachio cupcakes
For the Cupcakes: 1/2 cup roasted pistachio nut meats, plus more for sprinkling 1/2 cup (1 stick) unsalted butter, softened 1 cup sugar 1 egg, at room temperature 1/4 cup full-fat plain Greek yogurt, at room temperature 1 teaspoon pistachio extract (Note: Depending on the brand of extract you use, the strength may differ, therefore you may need to adjust the quantity of extract accordingly) 1 1/2 cups cake flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup milk, at room temperature Optional: 1 drop green food coloring For the Frosting: 2 (4-ounce) white chocolate baking bars, chopped 1 cup (2 sticks) unsalted butter, softened 1/4 teaspoon salt 1 teaspoon vanilla extract 3 cups sifted powdered sugar (confectioners’ sugar)
2.1K reactions · 88 shares | Mini full buttercream rose cupcakes 💞 This is a great way to pipe roses on your minis that won’t be super top heavy but are still bloomed and beautiful. The secret is starting with a small base. When you keep that base small, you ensure the flower doesn’t get really tall, even as you build those first few rows upward. By building those petals out upward first, you have enough space under your rose to turn build outward and down even with that small base. Now some piping info: 🩷 to start, I pipe just enough buttercream on my flower nail to pipe around and create a circle. That first little blob gives something for your tip to hold onto. 🩷 pipe your first petal so that it slightly overlaps the circle in the center. Then pipe, a second petal that overlaps the first. I pipe these first two petals away from my body. 🩷 I piped the remaining petals towards my body. Like I say on the screen, pipe each new row of petals slightly higher than the previous one. If you go too high or flair out too far, your petals won’t be stable. 🩷 as I start to pipe my last couple of rows of petals outward and down, I add buttercream around the bottom of the flower so that there’s sufficient buttercream for those petals to hang onto. Otherwise, they’ll flop over.
