Ingredients:
• 1/2 cup or 120g pure pumpkin puree (ensure it’s 100% pumpkin, not pumpkin pie filling) 
• 1 egg
• 1 1/2 cups or 150g oat flour (or grind oats into flour in a blender)
• 1 tablespoon or 14g coconut oil

Instructions:
1. Preheat the oven to 350°F (175°C).
2. In a bowl, combine the pumpkin puree, egg and coconut oil. Stir until smooth.
3. Gradually mix in the oat flour until a dough forms. If the dough is too sticky, add a bit more flour.
4. On a lightly floured surface, roll the dough out to about 1/4 inch thick. Use a small cookie cutter (or just cut into small squares).
5. Place the treats on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until they’re firm.
