Ingredients: To grind into masala: • Grated coconut – 2 tbsp • Roasted gram dal (pottukadalai) – 1 tbsp • Green chilies – 2 • Garlic – 2 cloves • Ginger – 1 small piece • Cloves – 2 • Fennel seeds –1tsp • Black pepper – ½ tsp • Tamarind – small piece (or ½ tsp paste) To sauté: • Spinach – 2 cups (finely chopped) • Onion – 1 (sliced) • Cooked rice – 2 cups • Turmeric – ¼ tsp • Salt – to taste • Ghee & oil – 1½ tbsp Tempering: • Mustard seeds – ½ tsp • Urad dal – 1 tsp • Red chilies – 2 nos • Chana dal – 1 tsp • Cashews – a few (optional)
