For the Dressing: 1/4 cup olive oil 2 tablespoons red wine vinegar 1 teaspoon dried oregano 1 garlic clove (minced) Salt and pepper to taste Preparation: Prepare the Vegetables: In a large salad bowl, combine the mixed salad greens, cucumber slices, diced bell pepper, cherry tomatoes, red onion, and Kalamata olives. Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper until well combined. Combine Ingredients: Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly. Add Feta Cheese: Sprinkle the crumbled feta cheese and chopped parsley on top of the salad.
