150 gr hot heavy cream 33-36%
170 gr cold heavy cream 
10 gr glucose syrup 

Bring 150 gr of cream to a boil , but do not BOIL , pour over the chocolate and leave for a few minutes, make an emulsion, add cold cream and glucose. Make an emulsion 
Pour into wide container and cover with a cling film in contact . 
Refrigerate for 4-5 hours till the texture is smooth, arrange macarons .
