Pan fried zucchini is very delicious! I recommend eating them all on the same day as leftovers will turn soggy. The outside of zucchini slices are made crispy from breadcrumbs and freshly grated parmesan. To make, simply cut the zucchini, flour the slices, dip in egg mixture, then toss with parmesan and bread crumbs before frying in a pan.
