Just like a classic mojito, this version is filled with sweet and tart lime juice, simple syrup, mint and rum. However, it’s the addition of cream of coconut that takes it to a whole new level! A coconut mojito is a creamy, light and refreshing cocktail that is filled with the flavor of summer.

Combine all ingredients into tin shaker. Add ice. Shake vigorously for 8 - 10 seconds. Strain into rocks glass. Add fresh ice. Garnish with lime wheel through skewer and sprinkle cinnamon over top.

These ice cubes are fun to add to lemonade or other refreshing drinks. You could substitute any type of fruit, depending on what you have on hand. I like these in iced tea or lemonade. Prep time does not include freezing time.
