BAKED ZUCCHINI SLICES
• 2 or 3 zucchini, sliced
• 2 eggs, whisked
• 2 c. bread crumbs
• ¾ c. parmesan cheese
• 1/3 c. fresh basil
• 1-1/2 teaspoon red pepper flakes
• 1 teaspoon pepper
• 1 tablespoon garlic powder
• 1 teaspoon salt
1. Preheat oven to 450
2. Mix all dry ingredients.
3. Dip zucchini in eggs, then coat with dry mixture.
4. Lay on sprayed cookie sheet, bake 15-20 minutes, flipping halfway through.
5. Serve with dip if desired (below)
DIPPING SAUCE
Mix together:
• 1/3 cup mayo
• 1 tablespoon garlic powder
• 1 tablespoon lemon juice
• ½ teaspoon salt
• 1 teaspoon pepper
