recipes I've made in the last few months

I know, it's been ages since I've posted recipes that I've tried. When we decided to sell our house and move months ago, I lost any free time I had so I stopped baking on the weekends and didn't have time to put together food posts. I can't say that things have really slowed down as we are now in our new house and I have the whole house to paint, decorate and organize. Painting is pretty much how I spend most weekends and add a full time job to that mix and everything else and free time is hard to come by. I painted the office this past Wednesday since I had the day off work so this weekend was all about cleaning out the garage to fit room to park a car and now I have a bit of time to put this post together. One day soon when I have time to stage the house, I will take and post pics. In the meantime, I have a few house photos up on Instagram...

(These first two recipes I made as part of Simon's birthday dinner and they were AWESOME!)

maple criracha roasted cauliflower - baker by nature

slow cooker mac & cheese - brown eyed baker

coconut beef broccoli rice bowls - love and olive oil

buffalo chicken tacos - gimme some oven

rigatoni in blush sauce with chicken and bacon - jo cooks

cirtus chicken quinoa salad - sally's baking addiction

hash brown, broccoli, sausage and egg breakfast casserole - julia's album

easy cheesy baked tortellini - two peas and their pod

recipes I've tried in the last few weeks

Would y'all be shocked if I say AGAIN that it's been really nuts around here lately? LOL! I blame it on yet another hospitalization by Pablo. This one lasted 8 days and included a surgery. That's what happens when you get admitted to the hospital right before a long weekend - you basically just wait through the 4 days as everyone is off, including doctors and specialists that you might need to see. Awesome how that works. Pablo had surgery on April 8th to remove an abscess on his very enlarged prostate. He came home on the 9th and there is talk that another surgery is required in that area. This hospital stay was perfectly timed in the sense that my parents came back from their long Mexico annual vacay the morning that Pablo was admitted so they were a great help with the kids.

I did manage to do some cooking in the last few weeks. Here is the roundup of recipes I tried:

vietnamese banh mi street tacos - a spicy perspective

greek chicken souvlaki - the sugar hit

baked firecracker chiken tenders - le creme de la crumb

meatballs and pasta - jamie oliver

sloppy joe tacos - gimme some oven

tortellini skillet lasagna - lemons for lulu

meatloaf muffins - carlsbad cravings

candied chicken - taste and tell
