Banana Walnut Muffins



It is rarley that I make something and post in two days. Mostly it takes time for me to post unless if itis made for a event.
These muffin I made this tuseday so that I can use the New Camera I got from hubby dear on Monday.
One of the blog I go always if I want to make something sweet is Deeba's place Passionate about Baking.

On her side bar I saw this recipe for Chocolate banana muffins, but when I clicke to it the link was blanck, so I went to twitter hopping she will be there, I guess I was lucky, she was there and I told her about it and she fixed it in seconds and I could get the recipe.
I printed the recipe and fast went to the kitchen and made these muffins.
My daughter hated bananas, she theink they are slmiy fruit.
But add them in baking she loves it.
She was onverjoyed when she came home and saw these delicous muffins.

Last week hubby had gone to US, so my sis send this pack for me, he didn't go to their place, she send the pack in post to the place he was staying.
Got some 16 wilton colours and three sparkling powder and other baking goodies. Ifyou scroll down you will see few of the things she send me.
Aren't sisters great to have, especially when they send you things you love to have :-)

Check here for the recipe from Deepa and her other wonderful bakes. I have baked few of her bakes and it has always been excelente. And these muffins are so easy to make thatyou would be surprised.
I do have step by step pictures , i will add them later.
I followed the recipe fully except I added chocolate chunks instead of chips and aslo sprinkled chocolate chunks on top.

Orange Walnut and Chocolate Chip Muffin



The moment I saw this delicious Orange walnut muffin in Susan's place, Food Blogga, I knew I was going to make them soon and on top of it, she wrote in her place it is addictive, well that word itself will want someone to rush to the kitchen and make them. And that is what i did made these delicous muffins.

And she also wrote her mom is not a chocolate lover, but she loved these ones and she coudn't keep her hands off these delicoius muffins and her mom made them few times, so I was like my then it has to be yummy.
Well must say her mom was totally correct, when I mad them we at home coudn't keep our hands off these delicious Orange Walnut and Chocolate chip muffins.
If you don't believe me girls, just make them you will sure woudn't be able to resist them.
I followed the recipe just like it was in susan's place. Just one the top I dis some other chocolate chip that is all. Also instead of chocolate chip I used my onw chunky chocolates.

Mocha Walnut Choco Chip Muffin


According to my family, I am a chocolate addict. I eat chocolate day and night. I make so much desserts and cakes with chocolate that my hubby thinks I only know one ingridient and that is chocolate.
I am trying to make different desserts but I always tend to be partial to chocolate.
I can see on my expanding waistline too, that I have been too much indulging on chocolate.

Especially bloghopping is not helping, I look to blogs and If it is having chocolates then i bookmark them and tend to make as soon as I can.
This is one of those recipie I found in Deepa's place. I am sure you don't need a introduction to her place as you all will be knowing it, still what the heck I will say it :-) Passionate About Baking and the title says it all, she is really passionat in baking.

I have so many recipes I have bookmarked from her place.
The Moment I saw this Mocha Walnut Choco Chip Muffins I knew I was going to make them.
I made them for my daughter and her friends. I am sure I have mentioned , every tuesday my daughter brings her friend/friends home after school and she knows her mom will make somthing for her and her friends.

So that is what i did on tuesday, made these and oh yes I heard them saying wow really delcious muffin. And then yesterday her friends asked when is your mom going to make muffins again, so from that you can know how much they like these ones, so this recipe is a keeper.

I added less sugar and I have changed them in the recipe below.





I used orange callets for dcoration, which was yummy too.
Ingredients:
Hot water - 1/4 cup
Instant coffee/espresso powder - 2tbsp
Buttermilk - 3/4 cup
Vegetable oil - 1/2 cup
Eggs - 2 large
Vanilla extract - 1 tsp
Flour - 1 3/4 cups
Sugar - 1/4 cup
Brown sugar - 1/2 cup
Cocoa powder - 4 tbsp
Baking powder - 1 tsp
Baking soda - 1 tsp
Salt - 1 tsp
Chocolate chips - 1/2 cup
Walnuts - 1/2 cup / coarsely chopped / optional ; reserve a few halves for topping

Preheat oven to 375°F.
Line twelve 1/2-cup muffin cups with paper liners.
Stir 1/4 cup hot water and instant coffee in medium bowl until it dissolves.
Add buttermilk, oil, eggs and vanilla and whisk until well blended.
Mix flour, sugar, brown sugar, cocoa, baking powder, baking soda and salt in large bowl.
Add buttermilk mixture and stir just until combined. Mix in chocolate chips and walnuts (or pecans).
Divide batter equally among prepared muffin cups. Bake until tester inserted into center of muffins comes out clean, about 25 minutes.
Transfer muffins to rack and cool.

Triple chocolate Chunk Muffins

I made this muffin for my daughters friends when they came home for celebrating the end of the school exams. She specially asked if i make these muffins as all her friends love chocolate. Anyway whoe doesn't.....................So after the last day of exams she and her friends came to our place , they had bought take a away pizza from the pizza hut and you can imagine 9 teenagers!!!!! together in one room and it was just bla bla bla ( my hubby was having a headache that day and he told it was the worst day for having headache as he could hear all nine of them just talking and talking.................

Makes 12 Muffins.
250 gm flour
25 gm cocoa powder
2 tsp baking powder.
1/2 (half) tsp soda bicarbonate
100 gm each white, dark and Milk chocolate broken into chunks
2 large eggs beaten
290 ml buttermilk
80 gm muscovado sugar
85 gm butter melted

1. Preheat the oven 200°c. Butter 12 hole muffin pan. In a large bowl combine the flour, cocoa, baking powder, soda bicarbonate and chocolate. In a seperate bowl mix together the eggs, buttermilk, sugar and butter.

2. Add the liquid mixture into the flour mixture and stir untill just combined and the mixture is fairly stiff, don't overmix it. Spoon the mixture into the muffin hole generously.

3. Bake for 20 to 25 minutes untill well risen. Leave in the tins for cooling for 15 minutes. And then remove from the tin and cool on a wire rack.

Blueberry Buttermilk muffins

I made this muffin as blueberries are in season and they were delicious !!!!
So I thought Ill proudly share my recipe

Makes 12 muffins.
400 gm flour
175 gm caster sugar
1 tbsp baking powder
finely grated grind of 1lime
1/2 tsp salt
300 ml buttermilk
85 gm butter melted
2 large eggs beaten
300 gm fresh blueberries
1. Preheat the oven to 200°c. Butter a 12 hole muffin tin. In a large bowl combine the flour, sugar, baking powder, lime rind and salt. In a seperate bowl mix togetherbuttermilk eggs and butter.
2. Now por the buttermilk mixture into the flour mix. Stir untill all the ingredients are just combined and the mixture is guiet stiff, don't over mix it. Now fold in the berries and now spoon the mixture into the tins genorously.
3. Bake them 20 to 25 minutes ( ovens are different) untill risen and pale golden on top. Leave them to cool for few minutes in the tin as the muffins are really delicate when they are just out from the oven.
