As far as other renditions of this guy, I really can't find any. When other folks draw the famous climax of this story they tend to focus on the other creatures mentioned. The headless moon-calf gets very little attention.
This guy was the first of three smaller creatures that I redrew. The smaller ones are fun because they go so fast. Monday's will be one that has an unexpected cinematic connection.
