Chocolate Fudge Cake

Cocoa powder 50 gm 150 gm 300 gm


Oil 65 gm 190 gm 380 gm
Butter 60 gm 180 gm 360 gm
Water 115 gm 350 gm 700 gm
Sugar 165 gm 500 gm 1k
Self raisin flour 115 gm 350 gm 700 gm
Milk 65 gm 190 gm 380 gm
Eggs 1 3 6
Vanilla 1 tsp 2 tsp 4 tsp
for the fudge frosting
Plain chocolate 50 gm 100 gm 200 gm
Icing sugar 225 gm 450 gm 900 gm
Butter 50 gm 100 gm 200 gm
Cream or milk 45 mls 90 mls 180 mls
Vanilla 1 tsp 2 tsp 4 tsp
Method

1. Place the cocoa powder, oil, butter and water into a heavy bottomed sauce pan
and heat until the butter has melted and the mix become thick and stodgy.
2. Remove from the heat and allow to cool.
3. Mix the flour and sugar together making sure that there are no clumps of flour.
4. Beat the eggs, milk and vanilla together.
5. Mix the flour and sugar into the cocoa using a wooden spoon and beat until it is
a smooth paste.
6. Stir in the milk mix ensuring that the mixture remains lump free.
7. Tip into a greased and lined cake tin.
8. Place into a moderately hot oven and cook until the cake mix has souffléd and
cracked. A skewer should come out clean when inserted into the centre of the
cake.
9. Leave to cool in the tin for 15 minutes before turning out onto a cake rack.

To make the fudge frosting


1. Place the butter, milk and vanilla into a heavy bottomed pan and bring to the
boil. Remove from the heat.
2. Chop the chocolate into small even pieces and stir into the milk, ensuring that it
all melts.
3. Sieve the icing sugar into a bowl before adding to the chocolate mix and stir in
until it becomes a smooth paste.
4. Place on top of the cake, spreading to the edges and allow to set.
