CHAPTER I

INTRODUCTION

1.1 Background
Food plays a significant part in all aspects of human life, including from
fulfilling basic physiological needs to building social interactions and
psychological expression. Food has become recognized as an expression of
identity and culture and has emerged as one of the popular aspects of cultural
tourism. Discussions about food are inseparable from culture. As one of
cultural tourism’s products, the role of food or culinary tourism has become
increasingly important. Culinary tourism is a possible competitive advantage
that could be central to destination development, which in turn, can contribute
to the overall economic performance. Moreover, local food can be utilized as a
tool for differentiating one destination from others in the global marketplace
since a country’s cuisine exhibits elements of national culture and identity.

Traditional food is the food that has been introduced for generations to
generations and consumed by people in the specific areas. According to
(Fardiaz , 1998), Traditional food is food and drink, including snacks and
mixed ingredients or ingredients used traditionally, and has long been
developed specifically in the area and is processed from recipes that have long
been known by the local community with local ingredients and has a relatively
appropriate taste to the tastes of the local community.

Marwanti (2000) state that traditional food has the meaning of everyday
people's food, whether in the form of staple food, snacks, or special dishes that
have been passed down from generation to generation. The processing
methods for traditional food recipes and their taste are generally passed down
from generation to generation so that traditional foods vary from place to
place or region.
Food is very important part of a culture. Unconsciously, socialization
process begins through food. Traditional recipes that are prepared and
presented perfectly can make food has a distinctive taste. Palembang is one of
the cities in Indonesia which has a lot of traditional foods such as Pempek,
Mie Celor, Burgo, including Maksuba.

Maksuba is one of the traditional foods of Palembang. In tradition, this

cake is served on special occasions such as Eid and wedding celebrations.
Maksuba is believed to be a form of respect for relatives and guests who
come. Maksuba itself is one of the traditional Palembang foods that has
become a superior culinary for the people of Palembang. This cake is almost
similar to kojo, another traditional Palembang cake. Kojo cake contains milk
and the colour is green. The colour of Maksuba tends to be yellow with black
stripes in the middle, at first glance this cake is similar to a legit layer cake.
Like other cakes in general, Maksuba is made from eggs, sugar, butter,
vanilla, and of course, white sweetened condensed milk. The uniqueness of
the Maksuba cake lies in the egg ingredients, because what is used is not
chicken eggs but duck eggs. This makes the texture of the cake fluffy and
dense and tastes delicious.

In this research, the writer wanted to design a video script of Maksuba as a

traditional food in Palembang. The title of the research is “Designing a Video
Script of Maksuba as a Traditional Cake from Palembang”.

CHAPTER II

LITERATURE REVIEW

2.1. Traditional Food

Food plays an important role in local identity, consumer behavior, the

transfer of cultural heritage for future generations, and the interaction of this
heritage with the rest of the world. According to Fardiaz (1998), Traditional
food is food and drink, including snacks and mixed ingredients or ingredients
used traditionally, and has long been developed specifically in the area and is
processed from recipes that have long been known by the local community
with local ingredients and has a relatively appropriate taste to the tastes of the
local community.
While Nurdiyansyah (2014) states that, food is tradition, what's interesting
about food is the process and role of food in various rituals and traditional
ceremonies, from generation to generation, ancient recipes in managing food
continue to be passed down from generation to generation.
Based on definitions above, it can be concluded that traditional food is the
food that come during generations to generations that give the feeling of
authenticity and usually different from one area to another area that become
one of the culture in that area.

2.2. Video

Video is a medium for sending messages that can display sound and
moving images. Arief S. Sadiman (2011) stated that video is audio media
visuals that display images and sound. Message served It can be fact (events,
important events, news) or fictitious (such as stories), can be informative,
educational or instructional. Moreover, video is anything that allows an audio
signal to be combined with moving pictures sequentially (Daryanto, 2010).
And according to Arsyad (2011) explains that “video merupakan gambar-
gambar dalam frame, di mana frame demi frame diproyeksikan melalui lensa
proyektor secara mekanis sehingga pada layar terlihat gambar hidup”.

2.3. Design

Design is the process of imagining and planning the creation of objects.

According to Sachari and Sunarya (2001 p. 10) Design is a physical
translation of social, economic, and governance aspects human life, and is a
reflection of the culture of the era. Design is a tangible manifestation of
culture, design is a product of values that apply at a certain time. Basically
there are many notions of design. Other definitions about the design is that
"Desain merupakan suatu proses kreatif dalam memecahkan suatu
permasalahan dalam hal yang menyangkut perancangan suatu objek yang
bersifat fungsional atau estetis. Yang pada prinsipnya melihat aspek teknis,
fungsi, material, tanpa melepaskan unsur warna, garis, tekstur,
keseimbangan komposisi, dan bentuk” Beta (2008, p. 5).

2.3.1. Elements of Design

Lovett (1998) classified designs with the elements and principles. And
these are the elements of design:

1. Line
Line can be considered in two ways. The linear marks made with a
pen or brush or the edge created when two shapes meet.
2. Shape
A shape is a self-contained defined area of geometric or organic
form. A positive shape in a painting automatically creates a negative
shape.
3. Direction
All lines have direction -horizontal, vertical or oblique. Horizontal
suggest calmness, stability and tranquility. Vertical gives a feeling of
balance, formality and alertness. Oblique suggests movement and action
see notes on direction.
4. Size
Size is simply the relationship of the area occupied by one shape to
that of another.
5. Texture
Texture is the surface quality of a shape – rough, smooth, soft,
hard, glossy etc. texture can be physical (tactile) or visual.
6. Colour
Colour is one of the most obvious elements of design, for both the
user and the designer. It can stand alone, as a background, or be applied to
other elements, like lines, shapes, textures or typography.
7. Value
Value is the lightless or darkness of a color. Value is also called
Tone.

2.3.2. Principles of Design

Design process can run well when it follows some principle. Lovett (1998)
states that principles will guide a designer to create something. There are 4
principles such as balance, gradation, repetition and unity.

1. Balance Balance in design is similar to balance in physics. A large shape

close to the center can be balanced by a small shape to the edge. A large
light toned shape will be balanced by a small dark toned shape (the darker
the shape the heavier it appears to be).
2. Gradation Gradation of size and direction produce linear perspective.
Gradation of color from warm to cool and tone from dark to light produce
aerial perspective. Gradation can add interest and movement to a shape. A
gradation from dark to light will cause the eye to move along the shape.
3. Repetition Repetition with variation is interesting, without variation
repetition can become monotonous.
4. Unity Relating the design elements to the idea being expressed in a
painting reinforces the principal of unity e.g. a painting with an active
aggressive subject would work better with a dominant oblique direction,
course, rough texture, angular lines etc. whereas a quiet passive subject
would benefit from horizontal lines, soft texture and less tonal contrast.

From explanation above, the writer concludes that design is a plan to

arrange a concept before starting to create something with the specific
elements and principles.

2.4. Video Script

Video script is important in making a video. A script enables script writers

to generate ideas and imagination, and structure their creative works.
Tristiawati (2014) holds that video scripts is a guide for a script writer in
transforming ideas into video, pictures or images. Norbury (2014) states that
script is “sequences of actions or events” presenting focal ideas and can be
synchronized with other context scripts. Video script is crucial to help readers
and viewers comprehend text.

2.4.1. Writing a Good Video Script

According to Cockerham (2016) there are some tips to writting a good

video script :

1. Write a brief first

In order to write a script that drives the results you want you will
definitely need to write a video brief. Not only does this help you
understand your objectives, it also helps you to understand your audience
and you want to demonstrate to them.
2. Turn your message into a story
For any piece of video content you want to communicate with (your briefs
will help you identify these). The trick is translating these core messages
into a simple story for your script to follow
3. Speak in a language your audience understands
When writing your script, always talk in your audience’s language rather
than your own. Your script should be in line with your brand voice, but
never to the detriment of viewers. If you can conclude real words and
phrases that your audience use on your way to a great video script.
4. Keep it short and sweet
When it comes to script writing, less is always more. Say what you need to
say and keep it as short and succinct as possible.
5. Do not use words
You are making video, not writing a novel. You’ve got more than just
words to play with your script. The story in video content is told through
editing, motion graphics, music, sound effects and voice over, so don’t
feel like you need to communicate everything through dialogue.
6. Do several script readings
Once you’ve got a workable draft of your video script, you should start
reading it out.
7. Check against your brief
You’ll undoubtedly have several rounds of revisions to go through with
any video script.

2.5. Kue Maksuba

Palembang has many kinds of famous cake such as Delapan jam, Kojo,
Srikaya, Gandos and Kue Maksuba. Aminah (2015) defines that Kue Maksuba
is traditional food or cake of Indonesia especially from Palembang. Kue
Maksuba has many layers with colours brown. The process of making Kue
Maksuba needs a patience to make every layers. Kue Maksuba is easy to find
in Palembang when the time of the celebration of certain days, such as Chinese
New Year and Eid.

Aminah (2015) said that making Kue Maksuba tests your patience.
Because it is a long process and need full attention, so that’s why young people
often can’t wait to cook properly. Long time ago, they use round grill called
Gendok. Currently, the roasting process is more practical with a modern gas
burning oven.

According to Romlah (2008), the history of Kue Maksuba is not really

known but she knows that Maksuba Cake derived from Mak Zubaedah which
cooking cakes with ingredients in a pot . Luckily, the taste of the cake is very
good.

In addition, Kue Maksuba is one kind of Palembang famous cake in

Palembang that has long process to make it. It is because the cake has many
layers. Furthermore, Kue Maksuba is usually found in certain days, like Eid.
CHAPTER III

RESEARCH METHODOLOGY

In this chapter, the writer will discuss about the research methodology. And
the writer will used the Research and Development (R&D) method which is
developed by Sukmadinata (2017).

3.1. Method of the Research

The method that is applied in this report was Research and Development
(R&D) method. According to Sukmadinata (2008), that research and development
(R&D) is a research approach to produce a new product or improve an existing
product. The resulting product can be in the form of hardware or software.
Software products, for example, are programs for data processing, libraries or
laboratories, classroom learning, or educational models, training learning,
evaluation, guidance, management, and so on. As for hardware products, for
example, such as modules, books, packages, learning aids in classrooms and
laboratories, or learning programs. Moreover, Borg and Gall (2003) states that
research and development method is a process or steps to develop a new product
or improve existing products.

According to Sugiyono (2009) research and development (R&D) methods

are research methods used to produce certain products, and test the effectiveness
of those products. In order to produce a certain product that is used for needs
analysis research and to test the effectiveness of the product so that it can function
in the wider community, research is needed to test the effectiveness of the
product. Based on the opinion above, it can be concluded that research and
development (R&D) is a research model that aims to develop a product that
begins with needs research then development is carried out to produce a product
that has been tested and to perfect a product that is in accordance with the
references and criteria set forth. made to produce a new product through the
validation and testing stages.

Figure 3.1. R&D Steps Modification from Sukmadinata (2017)

3.2. Preliminary Study

This step is the first steps of research and development method. In this we
have three steps, they are: Literature Study, Field Survey and Product Drafting.

3.2.1. Literature Study

Literature study is the study about concept theories related to product to be

developed. For this step, the writer read some books, journals, e-book and article
that related to the topic of the research and development.
3.2.2. Field Survey

The field survey the writer used two methods: Interview and observation
to collect the data. Before observing, observers should prepare observation notes.
In this case, the writer interviewed the practitioner how to make Kue maksuba as a
traditional food from Palembang. Next, the writer observed how to make it.
Finally, the writer interviewed the practitioner how to design the video script.

3.2.3. Model Draft

Model draft is designing product from the data that the writer got from
literature study and field survey. After collecting and arranging the data from
literature review and the field survey. In this step, the writer made a list of plans
such as preparing the tools and ingredients needed to make kue maksuba, the
language used for the video script, the complete content of the video, and the
illustration for the background of the video.
3.3. Development of Product

The second stage was model development of the product that can be
divided into two steps, they were: Limited testing step and wider testing step
(Sukmadinata, 2017).

3.3.1. Limited Testing

In this limited testing step, the writer validated the product. The product
draft was given to people who is expert regarding the product that will be
developed, and then the expert gave comment and suggestion on the product. The
writer gave the draft model to 3 Experts. The writer asked Ms. Fera as an English
tutor at Palcomtech Prabumulih in order to check the diction and vocabulary used
in the script. Then, the writer gave the script to Mrs. Reni Astuti as the owner of
“Warung Mama Nie” to check the content of the video script. Finally, the writer
asked Mr. Reyhan Putra Sondika as a videographer at “ Voyyu Moments” to
check the video as the whole. The writer revised the model draft based on the
comments and suggestions from the experts.
3.3.2. Wider Testing

Wider testing is testing products that have been revised on limited testing
and the writer tried to give the product draft to the users to find out the
effectiveness of the product.
3.4. Final Product Testing and Dessemination

It was the last stage of Research and Development. Sukmadinata (2017)

mentioned that the student researcher of master degree and below can stop his/her
research until the product draft that has been revised in wider testing step.
Therefore, the writer decided to stop her research until the product draft has been
revised in wider testing step and considered it as the final product.

CHAPTER IV

FINDINGS AND DISCUSSION

4.1. FINDINGS

In preliminary study, the writer conducted three steps, they are literature
study, field survey, and model draft. In literature study, the writer read some
books (23 Resep Kue Autentik Palembang by Gerry Rudy), journals (Kue
Maksuba Warisan Masa Lampau yang Berpotensi Sebagai Daya Tarik Wisata),
and documents regarding how to make kue maksuba. In field survey, the writer
interviewed Mrs. Reni Astuti as the practitioner how to make Kue maksuba as a
traditional food from Palembang. Next, the writer observed how to make it.
Finally, the writer interviewed Mr. Reyhan Putra Sondika as the practitioner how
to design the video script. Based on the information from literature study and field
survey, the writer made the model draft. In this step, the writer made a list of
plans such as preparing the tools and ingredients needed to make kue maksuba,
the language used for the video script, the complete content of the video, and the
illustration for the background of the video.
The second stage was model development. In this stage, the writer
conducted limited testing and wider testing. In limited testing step, the writer
asked some experts to validate the product. First, the product draft was given to
Ms. Fera, the expert in English language in order to check the diction and
vocabulary used in the script. The following was the revision that has been made
on the basis of the expert’s comments and suggestion.

Finally, the writer asked Mr. Reyhan Putra Sondika to check the video as
the whole. He gave a suggestion to to adjust the backsound to be smaller than the
narrator's voice so that the narrator's voice is not covered by the backsound. Also
he said the camera is not steady enough, so there are some parts in the video
where the camera doesn't look smooth. And last, he suggest the writer to use
subtitle in the video.
After the products draft was revised in limited testing, the writer gave the
product draft to 5 users to find out the effectiveness of the product. The writer
showed the drafts after revised to one student of Muhammadiyah University, one
student of Sriwijaya University, and three students of UIN Raden Fatah
Palembang. The writer asked them about the content of the video along with the
design. They gave almost similar opinions. They said that the video was
interesting and informative, also the video was attract to watch.

The writer decided to stop her research until the product draft has been
revised in wider testing step and considered it as the final product.

4.2. Discussion

In findings, the writer had shown the design of the video to the experts.
The design was revised based on experts’ suggestion. This Video is about “
Designing a Video Script of Maksuba as a Traditional Food from Palembang”. In
this report, the writer used Research and Development method modified by
Sukmadinata.

In limited testing, the writer interviewed with Mr. Reyhan Putra Sondika.
He checked about the design of the video. He gave a suggestion to to adjust the
backsound to be smaller than the narrator's voice so that the narrator's voice is not
covered by the backsound. It is in line with the idea mentioned by Champa et al
(2016) The better a video sounds, the better it looks. Less‐than‐stellar visual
elements can easily be accepted when the sound is clear.

The next is about camera, Mr. Reyhan Putra Sondika said the camera is
not steady enough, so there are some parts in the video where the camera doesn't
look smooth. It is also in line with the idea mentioned by Champa et al (2016)
Using a tripod or another means of stabilization clearly makes it easier to maintain
a steady shot, but if you’re stuck without a tripod, at least try to keep your
handheld camera as steady as possible so that you can avoid that annoying herky‐
jerky motion.
And last, Mr. Reyhan suggests the writer to use subtitle in her video. As
Barker (2022) states that, subtitles are traditionally used for viewers who are deaf,
hard of hearing, or speak a different language. By having subtitles, the content can
be accurately translated by Google and expand your reach even further than your
native language audience.

The next expert is Mrs. Reni Astuti as the owner of a bakery cake
“Warung Mama Nie”. She checked about the content of the video. She said the
whole video was good. The voice of narrator was good enough. Ayawaila (2017)
states that being able to understand quickly and precisely when the narrative
serves as a supporter, and when as a main information, especially if the visual
ability is rather weak in providing information to the audience. Mrs. Reni also
said the script was easy to understand. Script that are created must be easy to
understand, according to the target video time, and include changes in camera
angles, wardrobe, or backgrounds (Gearshift Studios, 2021).
