DONUTS
INGREDIENTS:
 • Maida- 1 1⁄2 cups
 • Salt- 1 tsp
 • Dry yeast- 7-8 gms
 • Castor sugar- 30 tbsp
 • Buttermilk- 1⁄2 cup or ( 1⁄4 cup milk+ 1⁄4 cup curd)
 • Baking powder- 1⁄2 tsp( leveled)
 • butter- 2 tbsp
2.Mix all ingredients to make smooth soft dough.
3.Keep covered for 40min, or depending on climate.
The butter should not melt
 4.Roll the dough and cut out doughnuts, keep on a tray and let it
 rise again for 20 minutes till double.
 5.Spread lots of maida on plate to keep doughnuts on it.
 6.Lift carefully and deep fry in medium hot oil till golden.
 • Glaze topping:
 • 1 cup – icing sugar
 • 2 tbsp water
 • A drop of lemon juice
 • Sprinklers
 • Mix everything together and fill in piping bag drizzle over doughnuts or dip fully
                                        1.BASIC FRIED DONUTS
INGREDIENTS:
• Maida -250 grams
• Active fresh yeast – 5 grams
• Butter – 15 grams
• Sugar – 15 grams
• Water / Milk – 1 or 1⁄2 cup and 1 tbsp curd.
METHOD
Mix all and make a dough.
Cover with kitchen towel
and let the dough rise for , double in size.
4. Once the dough has risen, turn it out onto the counter and knead a
little until you have a smooth ball of the dough. with a rolling pin, roll
dough out into a 12- inch round circle. Using donut cutter.
Cut dough and place on a parchment paper lined cooling rack to
raise for another 30 minutes until puffed.
5. In a large pot , put oil and heat. Once the oil is ready, gently place
2-3 donut rounds into the oil and fry until golden. Flip and repeat on
the opposite side. Immediately remove from the oil onto a paper –
towel lined cooling rack.
6. Or You can bake at 250 in a preheated oven.
                                       2.BAKED DONUTS
INGREDIENTS:
• Maida – 2 cups
• Salt – 1⁄4 tsp
• Sugar – 3 tbsp
• Curd – 2 tbsp
• Instant Yeast – 3⁄4 tsp
• Softened Butter – 1 tbsp
• Luke warm water – 1⁄2 cup & 2 tbsp
• Oil – 1 tsp
• Milk – 1 tsp ( for milkwash)
METHOD:
1. In a bowl, take maida and add salt and toss nicely.
2. Add sugar, curd , instant yeast & butter. Mix everything.
3. Using lukewarm water knead into a soft dough
4. Cover the bowl and let it rest at some warm place for atleast an
hour or till it becomes double in volume.
6. Deflate the dough, knead it lightly for 30 seconds or so.
7. Dust little flour on your working station and roll the dough ,
approx 1⁄2” thickness.
8. Using a donut cutter cut donut
shape.
9. Keep these shaped donuts in the
baking tray lined with parchement paper.
10. Cover these donuts with some cloth & leave for around 30 minutes for second proofing
11. Brush these donuts with milk and bake for 20 – 25 minutes. On 180-190 degree
12.Take out of the oven , keep donuts on the wire rack.
                                    3.BERRY Extravaganza DONUTS
INGREDIENTS:
For donuts:
• Flour recipe of donuts- 225
• Ground nutmeg- 1⁄2 tsp
• Vanilla essence- 1 tsp
METHOD:
For donuts:
1. Make donuts as per instruction and add all ingredients to it.
Assembling:
1. Once the donuts are baked let them cool and then pipe the donuts
with the glaze.
                                   4.MAWA MONA PISTA
                                        DONUTS
 INGREDIENTS:
 For donuts:
 • Maida- 1 cup
 • Baking powder- 1 tsp
 • Baking soda- 1⁄4 tsp
 • Castor sugar- 1/3 cup
 • Salt- 1⁄4 tsp
 • Mawa ( khoya)- grated- 1⁄4 cup heaped
 • Butter- 2 tbsp
 • Cardamom essence/ cardamom powder- 1⁄2 tsp
 • Milk- 1⁄4 cup
 • Curd- 1⁄4 cup
For glaze:
 • Dark chocolate /WHITE CHOCOLATE- 150grm
 • Amul cream- 200ml
 SOME PISTA FLAKES.
 METHOD:
 1. In a bowl , sift maida, baking powder , baking soda and salt.
 2. Rub 2 tbsp butter to the flour mixture to form a coarse dry mix.
 3. Add sugar, mix and keep aside.
 4. In a small blender jar, blend , milk, curd and mawa to a uniform
 mix , add cardamom powder and mix again.
 5. Preheat the oven to 180 *c.
 6. Fold the flour mixture into the liquid mixture and mix till it forms
 uniform batter , add little milk to adjust the consistency.( batter
 should be spoonable and slightly flowy).
 8. Spoon the batter in greased donut pans.
 9. Bake at 180*c for 10-12 minutes till toothpick inserted at the
 centre comes out clean.
 10. Let the donuts cool down for another 15 minutes in the pan.
 Loosen the sides of the donut with the backside of knife.
 11. Remove the donuts carefully from the pan and invert them
 on cooling rack. Once cooled store in airtight box.
For the glaze:
 1. Chop chocolate slab and keep aside.
 2. Heat the cream , add chocolate and allow it to sit for 5-6 minutes.
 3. Then stir to mix the melted chocolate into the cream
                                         5.RASMALAI DONUTS
 INGREDIENTS:
 For donuts:
 • Maida- 1 cup
 • Baking powder- 1 tsp
 • Baking soda- 1⁄4 tsp
 • Castor sugar- 1/3 cup
 • Salt- 1⁄4 tsp
 • Paneer- 1⁄4 cup heaped
 • Unsalted butter- 2 tbsp
 • Saffron – few strands( soaked in 2 tbsp milk)
 • Milk- 1⁄4 cup
 • Curd- 1⁄4 cup
For glaze:
 • Fresh cream- 1⁄2 cup
 • Sugar- 3-4 tbsp
 • Custard powder/ cornflour- 1 tsp
 • Saffron – few strands ( soaked in milk)
 • Nuts and rose petals for garnishing
METHOD:
 For donuts:
 1. In a small bowl, sift flour, baking powder , baking soda and salt.
 2. Rub 2 tbsp butter to the maida mixture to form a coarse dry mix .

 5. Fold in the maida into the liquid mixture and mix till it forms
 uniform batter.
 7. Spoon the batter in greased donut pans.
 8. Bake at 180*c for 10-12 minutes till toothpick inserted at the
 centre comes out clean.
 9. Let the donuts cool for another 15 minutes in the pan.
 10. Remove the donuts carefully from the pan and invert them

For glaze:
  Heat cream in a pan, keep stirring it immediately.
  Stirring constantly add saffron milk.
  Add sugar and keep mixing continuously.
  Mix custard powder in 1 tbsp of cold milk , add to the cream , mix
    continuously.
  Once the glaze thickens, switch off the gas , allow it to cool down.
  Just before glazing the donuts, warm them for 30 seconds in
    microwave.
  Pour the glaze over donuts, sprinkle nuts and serve.
                                    6.CHOCOLATY DONUTS
 INGREDIENT
For the chocolate glaze:
 • Dark chocolate- 200 gm
 • Cocoa powder- 2 tbsp
 • cream- 150 gm

7. RED VELVET DONUTS
INGREDIENTS:
  For donuts:
• Maida- 1 cup
• Baking powder- 1⁄2 tsp
• Salt- 1⁄4 tsp
• Cocoa powder- 2 tbsp
• Castor sugar- 1/3 cup + 2 tbsp
• Ripe banana puree- 1⁄2 cup
• Buttermilk- 1/3 cup + 1 tbsp
• Unsalted butter- 2 tbsp
• Vanilla essence- 1 tsp
• Vinegar- 3⁄4 tsp
• Baking soda- 1⁄2 tsp
• Red food coloring- 1⁄2 tsp
• For filling:
• Whipped cream cheese- 1⁄4 cup
• vanilla essence- 1 tsp
• icing sugar- 1⁄2 cup
• cream- 4 -5 tbsp
METHOD:
1. preheat oven to 200 *c.
2. In a large bowl , combine maida, cocoa powder , sugar , salt and
baking powder.
3. Add in buttermilk and banana, mix well, stir in butter.
4. In a small bowl, mix baking soda and vinegar together , then add
in vanilla.
5. Add the mixture to the donut batter, then stir in red food colouring,fill each donut mold 2/3 of the
   way full.
6. Bake for 7-8 minutes, then let cool for 5 minutes before removing.
For glaze
Mix all and make a glaze
This glaze will be a bit thicker , so add more or less cream
depending on your desired consistency
  8.BROWNIE PEANUT DONUT
 INGREDIENTS:
 • For donuts:
 • Milk/ dark chocolate- 225grm
 • Unsalted butter- 115grm
 • Banana puree- 2
 • Sugar- 1 cup
 • Dark brown sugar- 3⁄4 cup
 • Maida- 1 1⁄4 cup
 • Cocoa powder- 1/3 cup
 • Baking powder- 1⁄2 tsp
 • Salt- 1⁄2 tsp
  For topping
 • Sprinkle, chopped peanuts or toasted coconut
METHOD
    Sift the maida, cocoa powder, baking powder and salt
         into large bowl and set aside.
        2.To a slightly warm chocolate and sugar mixture add one
         banana at a time stirring after each banana.
        Add spoonful of the flour/ cocoa mixture and stir with a
         spatula until smooth.
        Pour batter into prepared donut pan and bake in
         preheated oven for 12-14 minutes or until done.
        Let it cool for 10 minutes in the pan, and pour the
         glaze and sprinklers.
    9.NUTTY NUTELLA DONUTS
INGREDIENTS:
 • For the donut:
 • Maida- 1 1⁄4 cup
 • Cocoa powder- 1tbsp
 • Baking powder- 1 1⁄4 tsp
 • Salt- 1⁄4 tsp
 • Castor sugar- 1⁄4 cup
 • Light brown sugar- 3 tbsp packed
 • Nutella- 1/3 cup
 • Butter- 3 tbsp , softened
 • Banana- 1⁄2 puree
 • Vanilla essence- 1⁄2 tsp
 • Milk- 1⁄2 cup
  For the glaze:
 • Icing sugar- 1 cup
 • Nutella- 2 1⁄2 tbsp
 • Milk- 4-6 tsp
 • Vanilla essence- 1⁄2 tsp
 • Hazelnuts for sprinkling
METHOD:
 1. In a mixing bowl whisk together maida, cocoa powder , baking
 powder and salt for 30 seconds, set aside.
 2. In a separate mixing bowl, whip together castor sugar, light brown
 sugar , nutella and butter until well blended, about 20 seconds, stir
 in vanilla and banana.
 3. Using maida alternating with milk , mixing and folding just until
 combined after each addition.
4. Bake in a pre heated oven at 180*C for 8-10 min or until done.
 5. Remove and cool for 5 minutes.
For glaze:
 In a small mixing bowl, whisk together , icing sugar, nutella, milk and
 vanilla essence until smooth paste.
Assembling:
 1. Spread nutella glaze over tops of donuts.
 2. Top with chopped hazelnuts and allow glaze to set at room
 temperature .
 3. Store in an airtight container at room temperature.
10.CREME FILLING WITH FLAVOURS
INGREDIENTS:
• Milk powder- 4 cups
• Sugar- 4 cups
• Cornflour- 1 1/3 cup
• Salt- 1⁄2 tsp
• Cream cheese- 250grm softened
• Milk- 3⁄4 cup
• Whipping cream- 350grm
METHOD:
1. Combine milk powder, sugar, cornflour , salt .
2. Mix together cream cheese and dry mix.
3. Slowly beat in milk.
4. Fold in the whipped cream.
5. U can add flavours
6. Peanut butter- 1 tbsp
7. Nutella- 1 tbsp
8. Any fruit filling
