“Há Tapas no Mercado!!!” works with regional Portuguese products from Serra da Estrela Mountain
(Celorico da Beira village) and Trancoso Historical Village located in Beira Interior Region famous for
it’s sheep’s milk creamy cheese and all smoked pork sausages.
Our Cheese from Celorico da Beira Village
The Sheep´s milk cheese from Serra da Estrela Mountain is considered one of the best cheeses in Portugal. Made exclusively
from sheep’s milk of two native specific species “churra mondegueira" and "bordaleira Serra da Estrela" the cheese is cured
with cardoon flowers, an mountain plants.
The most famous cheese is the creamy version with it’s soft core and slightly yellowed rind cured for 45 days. This cheese is
also produced in harder textures and more intense flavors such as the 3 month cure or the “reserve” with 8 month cure. All
styles are equally delicious.
Also famous from the region is the fresh sheep´s milk cheese named “Requeijão” it’s freshness and light taste makes it
perfect to combine with sweet or salty flavours.
Our Smoked Pork Sausages from Trancoso Village
Salpicão – A pork smoked meaty and hard sausage produced with a combination of large pieces of pork shoulder meats and
seasoned with ground pepper, wine, salt, garlic, and spices. It has a cylindrical shape and it’s wood smoked. Slightly spicy Its
never cooked and should be served sliced.
Paio - A pork smoked meaty and hard sausage produced with a combination of large carefully selected pieces of pork loins.
Seasoned with ground pepper, wine, salt, spices and wood smoked. It´s never cooked and should be served sliced.
Chorizo - A pork smoked meaty and hard sausage produced with a combination of selected pork meats cutted in small pieces
and seasoned with ground pepper, wine, salt, garlic, spices and wood smoked. It has a long cure process and a is low on fat.
It can be served raw, cooked (boiled) or/and roasted.
Spicy Chorizo - A mildly spicy pork smoked meaty and hard sausage produced with a combination of selected pork meats
cutted in small pieces and seasoned with ground pepper, wine, salt, garlic, spices and wood smoked. It has a long cure process
and a is low on fat. It can be served raw, cooked (boiled) or/and roasted.
Moura de Carnes - A mildly spicy pork smoked meaty and hard sausage, similar to Chorizo produced with a combination of
selected different pork meats and fats cutted in small pieces and seasoned with wine, salt, garlic, onions and spices. It has a
very strong and nice flavour. It can be served cooked (boiled) or/and roasted.
Morcela de Cominhos – The traditional black pudding smoked sausage with cumins is a mixture of soft pork fat, pork blood,
bread, onions, water and seasoned with cumins, ground pepper, salt and spices. It has a short wood smoked cure process. It
can be served cooked (boiled) or/and roasted.
Farinheira – The traditional white pudding smoked sausage is a mixture of soft pork meat, pork fat, bread, onions, peppers,
water and seasoned with ground pepper, salt and spices. It has a short wood smoked cure process. It can be served cooked
(boiled) or/and roasted or also mixed with scrambled eggs.
Alheira de Caça - The traditional game pudding smoked sausage is a mixture of wild pork meat, wild partridge meat, wild duck
meat, wild rabbit meat, bread, garlic, peppers and seasoned with ground pepper, salt and spices. It has a short wood smoked
cure process. It can be served cooked (boiled) or/and roasted.
