DEFENCE FOOD SPECIFICATIONS - 2022

SPECIFICATION NO 350 : FRUITS DRIED


Quality

1. The fruit dried shall consist of any of the following varieties and shall be obtained
from the fruits of latest season's crop:-

(a) Apricots - Commonly known as Khurmani, Khubani.

(b) Raisins Brown - Commonly Known as Kishmish.


(Seedless variety of grapes)

(c) Raisins Green (seedless) - Commonly known as kishmish.

(d) Sultanas - Raisins Brown Seeded variety of grapes.

(e) Currants - Raisins Black seeded variety of grapes.

(f) Almond Without Shell - Refer DFS No 351.

(g) Cashew Kernels Whole - Refer DFS No 349.


Raw (Grade240)

(h) Walnut Without Shell - Refer DFS No 356.

(j) Dry Dates (Chohara) - Refer DFS No 541.

2. The fruits dried shall be of uniform variety, having similar physiological characteristics
as to appearance, size, colour and grade. It shall be totally free from damaged, under
matured or inferior grades.
3. Fruits dried should not have distinct variations in colour shape and size than the
principal variety; such variation shall be taken as "Admixture of other varieties".
4. The fruits dried shall be dry and NOT sticky, showing signs of sweating and sugar
separation. Fruits shall be thoroughly cleaned; stalks removed, and properly selected
having discarded damaged units.

5. The fruits dried shall be free from dirt, insect /mould/ fungus attack and shall be in a
state of perfect preservation.

6. The fruits dried shall be free from all added ingredients, colouring matters and
preservatives other than Sulphur-di-Oxide as laid down in FSSAI Act/Rules.

7. The fruits dried shall have a pleasant sweet taste and totally devoid of sourish or
fermented taste and shall have characteristic pleasant flavour.

Packing

8. The dried fruits shall be packed as per details in paras 9 & 10 below, having placed
the dried fruits in a polythene food grade pouch(not less than 300 gauge) duly sealed within
tin containers, which shall be stencilled/ lithographed as per prescribed particulars.

9. Tins. The Dried Fruits shall be packed in hermetically sealed wide mouth 18 litre
square trade tins conforming to BIS Specification No. IS: 916-2000 duly marked with BIS
Certification Mark. The tin shall have a press-in-lid and tagger plate soldered all around
over the lid. The tins shall be thoroughly cleaned and dried before placing polythene pouch
and dried fruits. Each tin shall contain 12 Kgs nett of dry fruits. Each tin shall contain 12 kg
nett of dry fruits except for Apricots and Dry Dates where it shall be 10 kg.

10. Corrugated Fibreboard Cartons (CFC). Each CFC shall contain two tins. The
material and manufacture of CFC shall conform to Specification No 311 and the design,
dimensions and strapping thereof shall be in accordance with Appendix „L‟ to the
specification.

Marking

11. Tins. Each tin shall be printed/lithographed or stencilled with the following particulars
which shall be indelible and prominently legible:-

(a) Commodity : DRY FRUITS ("NAME OF FRUIT”)


(b) Name of Supplier :
(c) AT Number and date :
(d) Date of packing :
(e) Warranty Expiry :
(f) Veg logo :
(g) Batch/Lot number :
(h) Nett weight :

12. CFCs. The following particulars shall be printed/ stencilled on one side of the CFC:-

(a) Description of contents : DRY FRUITS (NAME OF FRUIT)

(f) Nett weight : 2 x 12 Kgs

13. The warranty shall be in accordance with Standard Warranty Clause (Appendix „J')
for a period of SIX months.

Inspection

14. An inspection shall be carried out by the Director General of Supplies and Transport
or an officer acting on his behalf on all supplied tendered for acceptance. The decision of
this officer shall be final.

15. The fruits dried shall conform to the following analysis:-

(a) Moisture - Not more than 14%


(b) Total Carbohydrates/ - As per Appendix „A'
Proteins/Fats (as applicable)
on DW Basis
(c) Sulphur-di-Oxide
(i) in raisins, sultanas and currants - 500 - 750 ppm
(ii) in apricot - 500 - 1500 ppm

(d) Dirty units - Not more than 2.0%


(e) Damaged & Discoloured units - Not more than 2.0%
(f) Sugared raisins - Not more than 5.0%
(g) Units with stalks - Not more than 4.0%
(h) Mouldy/ID units - Not more than 1.0%
(j) Admixture of other varieties - Not more than 5.0%
(k) Taste and smell - (Refer para 7 above)
(l) Inorganic Matter - Not More than 0.5% (point 5%)

Note

Discolored means a raisin affected by a brown to dark brown discolored area


around the cap stem end of the raisin that equals or exceeds the area of a circle 1/8th
inch in diameter. Provided that the overall appearance, keeping quality and edibility
of the product are not seriously affected

Damaged Raisins means raisins affected by sunburn, scars, mechanical


injury which seriously affects the appearance, edibility and keeping quality.

Sugared Raisins means raisins with external or internal sugar crystals which
are readily apparent and seriously affect the appearance of the raisins.

Microbiological Examination Limit (cfu)

(m) Aerobic plate count - NMT 40000/gm


(n) Yeast and Mold count - NMT 100/gm
(o) Salmonella - Absent /25g
(p) Listeria monocytogenes - Absent /25g
(q) Vibriocholerae - Absent /25g
(r) E-coli - Absent in 1gm/ml

Note.
(a) Eight samples (for polypouches) and four tins samples (for Tin pack) will be
used for Microbiological test.

(b) Refer Appx „B‟, table 01 to 04 and Sampling Guidelines of Food Safety and
Standards Regulations, 2011”.

16. The methods of analysis shall be as laid down by the Association of Official
Analytical Chemists (AOAC latest edition).

Mandatory Requirements Of FSSAI/ BIS

17. All mandatory requirements of FSSAI/BIS, as amended from time to time, pertaining
to the above Specification including marking of BIS certification mark for container/contents,
Best Before______________, coloured symbol for declaring vegetarian and non-vegetarian
food etc on packs shall be complied with.

APPENDIX ‘J’

STANDARD WARRANTY CLAUSE

1. The contractor warrants the supplies delivered to be sound, wholesome, and meet
the quality parameters as per DFS for a specified number of months from the last day of the
month of manufacture, in any climate and under all conditions of storage and movement in
India.

2. In the event of the supplies or a part thereof having been declared during the period
of warranty as being not meeting the quality parameters as per DFS by the Director General
of Supplies and Transport, or any officer acting on his behalf, (whose opinion as to whether
or NOT the particular consignment is meeting the quality parameters as per DFS will be
final), the purchaser will have the right to dispose of the condemned stock in any way he
considers necessary after giving due notice to the contractor and also, at his discretion,
either to allow the contractor to replace the condemned stock within a specified period, or to
recover from the contractor the contract price thereof together with all incidental and freight
charges incurred from the place of delivery to the place where the supplies were ultimately
condemned. The opinion of the Brigadier Procurement or an officer acting on his behalf, in
regard to these charges will be final.

3. The declaration by the Brigadier Procurement or an officer acting on his behalf,


communicated to the contractor in writing that a particular consignment has been
condemned will be taken by the Contractor as the conclusive evidence of the proper
condemnation of that consignment.
