Teriyaki pineapple meatballs

(Appetizer)

Ingredients:
Pineapple chunks
Medium onion (chopped)
Red bell pepper (chopped)
Breadcrumbs
¼ tsp Ginger powder
Salt and pepper to taste
100g Ground beef
Oil for frying

Sauce:
1tbsp Oil
1tbps Soysauce
1 ½ tbps Honey
1 tsp Vinegar
1 tsp Garlic powder
¼ tps Ginger powder

Procedure:
1. Combine ground beef, chopped onion, chopped red bell pepper,
bread crumbs, ginger powder, salt and pepper in a mixing bowl
mix all of the ingredients lightly.
2. After you mix all of the ingredients, shape into ball. Then deep fry
it.
3. For the sauce combine all of the ingredients and bring it to a boil.
4. After the meatballs are already cooked toss it in the sauce.
5. On the pineapple chunks put it in the top of each meatball and
use tooth pick to stable the pineapple chunks.

Pumpkin soup
(thick soup)
Ingredients
100 pumpkin
1 cup stock
1 small white onion finely chopped
20g flour
50ml all-purpose cream
Salt and pepper to taste

Procedure:

1. Sauté the onion first until it caramelized then add the pumpkin.
2. Add the stock and simmer it until the pumpkin become soft.
3. Add the slurry
4. Turn of the heat and transfer it into the blender and blend it until
smooth.
5. Finish it with all-purpose cream
6. Add garnish if you have

Mushroom and leek soup


(clear soup)
Ingredients
75g shitake mushroom chopped
1/2 pc leek
½ pc bay leaf
½ pc stalk celery chopped
Salt pepper to taste
1 medium onion chopped

Procedure
1. Put the stock, mushroom, celery, onion and bay leaf into pot and
add salt and pepper, boil until it cooked.
2. Transfer it into a soup plate.

Mediterranean Tuna Salad


(Salad)
Ingredients:
Red bell pepper
Red onion chopped
Cucumber
Tuna in can
Fresh parsley
Salt and pepper
Half lemon
Lemon zest

Procedure:
1. Add red bell pepper, red onion, cucumber, albacore tuna fish,
garlic, chickpeas, black olives and lemon zest in a large mixing
bowl and mix.
2. Drizzle olive oil, lemon juice and season with salt and freshly
ground black pepper.
3. Garnish with fresh parsley and serve cold. Enjoy!

Ham and Cheese sandwich


(close sandwich)
Ingredients:
2 slice of loaf bread
Lettuce
Ham
Tomato
Cheese
Mayonnaise

PAN-SEARED PORK CHOP


(Main Course)
INGREDIENTS:
1 boneless pork chop
4 grams of Butter
Pinch of Salt
Pepper to taste
Olive oil
Garlic cloves
PROCEDURE:
1. Season the pork with salt and pepper
2. Add olive oil and make sure it coats the whole pan and spread the
butter the add the garlic.
VEGETABLES

BUTTERED BAGUIO BEANS


(Sides)
4 pcs trimmed Baguio beans cut in half then blanched
1 tablespoon butter
Salt and pepper to taste

MASHED POTATO
(Starch)
1 pc potato, peeled, boiled then mashed while still hot
1 tablespoon Butter
2 tablespoons Cream
Salt and pepper to taste
Mix together.

Strawberry Panna Cotta


(Cold Dessert)
Ingredients:
125 grams cream (All Purpose Cream)
2tbsp confectioner’s sugar
1tsp gelatin softened in (unsweetened)
1tbsp cold water
1 to 2 tbsp. Strawberry puree assessment
Procedure:
1. Bring cream, and confectioner’s sugar to a boil. Simmer and reduce
to 1/3 of its volume while stirring occasionally. Remove from fire.
2. Add the softened gelatin and mix to dissolve.
3. Add the fruit juice/puree.
4. Pour into small glass or container. Refrigerate until firm
Mocha Muffin
(Hot Dessert)
Ingredients:
¾c APF
¼c Brown Sugar
½ tsp Baking Soda
¼ tsp Salt
1/8 tsp Baking Powder
1 sachet Kopiko Brown
¼c Evap Milk
¼c Vegtable Oil
1 pc Egg
¼ tsp Vanilla Extract
