Part I: Information Sheet
Introduction
I am Carlos Huitzil Cuachayo, a Nutrition major at UPAEP. I am on research about how the display of
calories on the menu of a Starbucks branch in Puebla can influence the eating behavior of university
students. I am going to give you information about this study and invite you to be part of this research.
You can take the time you need to reflect on whether you want to participate or talk about this research
with anyone you feel comfortable with in deciding. If at any time you do not understand a word or
concept, I will take the time to explain it to you, and you can ask questions at any time.
Purpose of the research
Many students at UPAEP in Puebla make daily decisions about what they eat, and I want to better
understand how calorie information on Starbucks menus can influence those decisions. I think you can
help me by sharing your experience and opinions on how this information affects your eating behavior. I
want to know how students interpret and use calorie information and how often they use it when
deciding what to order.
Type of Research Intervention
This research involves a short interview of approximately 10 minutes, followed by a questionnaire that
will take about 5 minutes. This process is completely confidential and designed to better understand your
views and behaviors without causing any discomfort.
Participant Selection
I invite you to participate in this research because I believe that your experience as a UPAEP student can
contribute to the understanding of the eating behavior that the young adult population currently presents.
Voluntary Participation
Your participation in this research is completely voluntary. It is your choice whether or not to participate,
and the decision you make will not have any impact on your studies or any academic assessment. If you
decide to participate, but later change your mind, you may stop participating at any time. Even if you
have already completed the interview or questionnaire, you may request that the information you
provided not be used in the research study.
Procedures
A This research is qualitative, so I am asking you to help me learn more about how calorie information
on Starbucks menus influences students' eating behavior. If you agree, you will be asked to participate in
a brief interview and complete a questionnaire.

B. During the interview, I will be with you in a comfortable location inside the Starbucks branch,
recording an audio (mp4) of your responses. The questions will be related to your eating habits, how you
make decisions about what to eat, and whether calorie information on the menu affects those decisions.
If you do not wish to answer any of the questions during the interview, you can tell me and we will go
directly to the questionnaire section. The recorded information is confidential and no one else will have
access to the information documented during your interview. The recordings will be stored on a Micro
SD memory card and will be destroyed after 2 weeks.
C. For the questionnaire survey, you will be provided with a physical form that you will need to
complete yourself using a pen or pencil. The questions will be designed to better understand your
experience with the display of calories on the menu. If you do not wish to answer any of the questions,
you may skip it and move on to the next question. I will compile your responses into a database for
further analysis. The information recorded is confidential; your name will not be included on the forms
and no one else except the staff involved in the study will have access to your survey.
Duration
The collection of your responses will be done only once and will last approximately 15 minutes between
the interview and the questionnaire.
Risks
There are no anticipated significant risks to participating in this research, but there is a possibility that
some questions may make you feel uncomfortable or vulnerable. If at any time you do not feel
comfortable with a question, you are not required to answer it or continue with the interview or survey.
You do not have to give any reason for not answering a question or for refusing to participate in the
research. Your physical and mental well-being is a priority throughout the process.
Benefits
There will be no direct benefit to you from participating in this research. However, your participation
will contribute to a better understanding of how the display of calories on menus influences consumers'
eating behavior. This information could be useful in designing better policies or strategies to promote
healthier food choices in the future.
Reimbursements
As result of their participation, you will not be provided any incentive to take part in the research.
Confidentiality
The information you provide during this research will be treated with the utmost confidentiality. Your
responses will be identified only by a code without including your name. No personal information about
you will be shared with anyone outside the research team. However, since this research is being
conducted in a public setting such as a Starbucks branch, other people may notice your participation and
ask you questions. It is important that you are aware of this, although we are committed to not disclosing
any information that could personally identify you. All information collected will be kept private and
will not be shared with third parties, except in cases of request by regulatory bodies or the institution
itself, who will be asked to maintain the same confidentiality.
Sharing the Results
Nothing you tell us today will be shared with anyone outside the research team, and no information will
be attributed to you by name. The results of this research will be presented at my oral defense of my
professional examination. In addition, the results may be shared through publications and in scientific
poster competitions, only in the form of aggregated statistical data, without any reference to personally
identifiable information. If you wish to know the results of the study, I will provide you with a summary
after the project is completed.
Right to Refuse or Withdraw
You do not have to participate in this research if you do not wish to, and you are advised that you may
stop participating in the interview or questionnaire at any time. At the end of the interview, I will give
you the opportunity to review your comments, and if you do not agree with any part of them, you may
request to edit or delete parts of them, or even the entire recording or note if you are not comfortable with
what was recorded.
