Introduction

Tourism in a general way includes "the activities carried out


by individuals during their travels, their stays in places
situated outside their usual environments. It can be considered
as a tourist, any person traveling outside of their residence
main for a duration of at least 24 hours and less than 4 months and
who spends at least one night in a collective accommodation
(inn, hotel, etc.) or private in the place visited
such as seaside tourism, business tourism, health tourism,
sports tourism and cultural tourism… etc

Since the year 2001, the tourism sector in Algeria is preparing to make its
first steps, after a dark period during the 1990s
in which tourism was put in parentheses, and which was delayed the
development of infrastructure and discourages many tourists
to stay

The hospitality industry, also known as the hotel industry, is an activity


belonging to the tertiary sector which includes all of the
establishments that offer a lodging or dining welcome service
clients, passing through or local, for a determined duration, in
exchange of a contribution.

Hotels and restaurants can be found in all countries. The branch of


the hotel and restaurant industry is closely linked to that of tourism,
business trips and conferences that, in many countries, brings a
great contribution to the national economy

The primary function of a hotel is to accommodate guests. We distinguish between


transitory establishments, offering basic accommodation for the night, by
for example, inns and motels that welcome travelers
business and tourists, luxury complexes welcoming clients in
holiday resorts in seaside, thermal or sports stations and the
conference hotels.
The primary function of a restaurant is to satisfy needs.
basic in foods and to serve food and drink to people
who have a meal outside their home to be consumed on site in some
places and in a convenient manner.
We have chosen the theme of starting a hospitality restaurant business
in order to assess the practices and theoretical knowledge acquired during our
training at INHT, within the hotel ;;???…
