SALUKARA
is a crpe-like rice cake and a popular delicacy
in Borongan, Eastern Samar. It is made from ground rice (both
cooked and uncooked), brown sugar, and coconut milk. But, what
makes salukara different from the others is its secret ingredient
tuba. Tuba is the Warays traditional wine extracted from the sap
of an unopened coconut bud, known for its stinging bitter and
sweet taste. In the preparation of salukara, tuba is used as
pampatubo, instead of the common use of baking powder.
Typically, the ingredients are mixed into a batter and then cooked
on a hot pan brushed with butter. The result is a thin, stretchy
pancake with a hint of sweetness and a slightly sour taste.
It is a perfect partner of hot choco or tea for breakfast or soft
drinks for merienda. It is already deeply-rooted to the Filipino
culture as it is an important and common item in every Filipino
event such as birthdays, fiestas, Pasko, and Bagong Taon. Aside
for the fact that all of its ingredients are recognizably Filipino in
nature, it is the truest Filipino food because it is a reflection of the
very essence of the Philippines and the Filipinosgreatness in
simplicity.
