Rehydrate dried wood ear mushrooms with boiling water for 15 mins. Drain. Thinly slice.  2. Soak vermicelli noodles in warm water for 15 mins. Strain and touch chop.  3. Peel and shred carrots.  4. In a mixing bowl, combine all the ingredients and seasonings. Mix with hands for best consistency.  5. l’ve been seeing these steamed rice paper dumpling recipe and had to try it. I used cabbage, carrot and zucchini, but you can use whatever vegetables you like. It’s simple to make with sauteed vegetables. It’s so tasty and healthier than fried dumplings. Use your favorite dipping sauce and enjoy!

Cook Time: 45 minutes Makes: 15

2 tbsp oil
1 tsp ginger chopped
2 cloves garlic chopped
1 small onion sliced
1 cup cabbage sliced
1 carrot sliced
1 zucchini sliced
½ tsp salt
15 medium sized rice paper wrapper

Heat oil in a pan and turn the heat to medium high.
Add ginger, garlic and saute for 1 minute.
Add onion and saute for 2 minutes.
Add cabbage, carrot, zucchini and salt.
Cook for 5-7 minutes and remove from heat.
