Make the pastry cream: whisk together cornstarch, sugar and salt then add in egg yolks, vanilla and milk. Cook over medium heat until mixture thickens, stirring constantly. Remove from heat and whisk in butter. Transfer to a heatproof bowl or baking sheet, cover with plastic wrap to prevent skin and chill in fridge (I place it in the freezer for 15-20 mins) 2. Whip heavy cream, icing sugar and vanilla to stiff peaks.
