Lamb Spices
To really bring out the flavor of lamb, nothing beats the right seasoning; this specific mix is a great way to enhance the flavor and aroma of your dishes. It goes extremely well with this lamb sauce.
Here’s the best seasoning for lamb if you’re looking for the classic garlic herb mix:
- Rosemary, fresh or dried
- Thyme, fresh or dried
- Oregano, fresh or dried
- Garlic Powder
- Onion Powder
- Salt and Pepper, to taste
Other than the oregano, it’s pretty close to the very popular Prime Rib Rub.
How Much Lamb Seasoning To Use
I’ve had a few readers email asking how much lamb this mix covers. Here’s some general guidelines based on cuts I’ve personally cooked in my kitchen. One batch of seasoning per:
- 1 Rack of Lamb
- 1 Boneless Leg of Lamb (Up to 6 Pounds)
- 8 Lamb Loin Chops (Between 1.5″-2″ Thick)
Lamb Marinade
Prefer a marinade over a dry rub? This spice rub can easily turn into a lamb chop marinade. Just add 1 batch of the lamb seasoning to 1/4 cup of olive oil. That’s it!
Or you can always use this popular Lamb Chop Marinade.

Variations
Fresh Herbs – Instead of using dried herbs, swap in fresh herbs. You will need to adjust the measurements for each fresh ingredient by using 3x the amount of dried. For example, 1 tsp of dried rosemary would need to be replaced by 1 tbsp of fresh rosemary (= 3 tsp).
Spicy – throw in some red pepper flakes if you like a little heat. Start with 1 tsp and work your way up from there.
Greek – for a Greek twist, add in a little lemon juice and mint. Serve with this tzatziki sauce.
Other Herbs and Spices For Lamb
Other herbs and spices that work well: paprika, mustard powder, coriander, cumin, cayenne, dried lemon peels, sage, and mint. Mix and match as you please!
If you need a good binder, we highly recommend using our Dijon mustard recipe.
