Today we're sharing a recipe for vegetarian pasties that are simply delicious when made from scratch! With lots of mature Cheddar cheese in the filling, there is no way you will not like these delicious parcels of joy!

Think cosy Italian stew, but wrapped in golden pastry. Definitely the cheat way to 'eat your veggies', these flaky, crispy little numbers are an absolute delight.

You won’t be able to have just one of these homemade vegetable pasties! A warm, peppery vegetable filling is encased in flaky, buttery pastry that is just begging to be dunked in a rich tomato sauce. Bursting with flavour, these vegetarian pasties are perfect for dinner, a light lunch or as an appetiser.

A Proper (Vegan) Cornish Pasty with a flaky, buttery, rough puff pastry filled with tender veggies enveloped in a rich, thick, flavoursome sauce. GURT LUSH (as we say down here in the Westcountry).

This recipe makes four generous pasties, enough for a very proper lunch. Prepared, whole wheat pastry dough is cut into squares and heaped with a hearty, cooked filling of onions, carrots, diced potatoes, turnips, mushrooms and Cheddar cheese. The pastries are folded into triangles, sealed and baked until golden brown.
